Chicken Parmesan

Ingredients

  • 2 large eggs
  • 3 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1/4 tsp salt and pepper
  • 3 large chicken breasts, halved
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese
  • 1 tsp garlic powder
  • 1/2 cup olive oil for frying
  • 8 oz mozzarella cheese, shredded
  • 1/3 cup parmesan cheese
  • 2 tbsp chopped basil or parsley
  • Pasta of choice
    For the Sauce:
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 14 oz tomato sauce
  • 1/4 tsp salt and pepper
  • 1 tsp dried Italian herbs
  • 1 tsp sugar

Instructions

  1. Preheat oven to 430 F
  2. Whisk 2 eggs, add minced garlic, chopped parsley, salt and pepper.
  3. Add chicken, flipping it over to coat both sides, and marinate for at least 15 minutes.
  4. Mix bread crumbs, 1/2 cup parmesan, and garlic powder.
  5. Dip chicken to coat.
  6. Heat 1/2 cup olive oil and fry chicken, 4-5 minutes each side.
  7. While chicken is frying, prepare sauce by heating 1 tbsp of olive oil and cooking onions for 3 minutes. Add garlic and cook for another 30 seconds.
  8. Add tomato sauce, salt and pepper, Italian herbs, and sugar. Cover lid and simmer for at least 8 minutes.
  9. Grease baking dish and add chicken.
  10. Top each chicken with 1/3 cup of sauce, mozzarella, 2 tbsp of parmesan, basil, and parsley.
  11. Bake in the oven for 15-20 minutes.
  12. While in the oven, cook pasta according to directions.
  13. Serve.
