Chicken Parmesan

Ingredients
- 2 large eggs
- 3 cloves garlic, minced
- 2 tbsp chopped parsley
- 1/4 tsp salt and pepper
- 3 large chicken breasts, halved
- 1 cup breadcrumbs
- 1/2 cup parmesan cheese
- 1 tsp garlic powder
- 1/2 cup olive oil for frying
- 8 oz mozzarella cheese, shredded
- 1/3 cup parmesan cheese
- 2 tbsp chopped basil or parsley
- Pasta of choice
For the Sauce: - 1 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 14 oz tomato sauce
- 1/4 tsp salt and pepper
- 1 tsp dried Italian herbs
- 1 tsp sugar
Instructions
- Preheat oven to 430 F
- Whisk 2 eggs, add minced garlic, chopped parsley, salt and pepper.
- Add chicken, flipping it over to coat both sides, and marinate for at least 15 minutes.
- Mix bread crumbs, 1/2 cup parmesan, and garlic powder.
- Dip chicken to coat.
- Heat 1/2 cup olive oil and fry chicken, 4-5 minutes each side.
- While chicken is frying, prepare sauce by heating 1 tbsp of olive oil and cooking onions for 3 minutes. Add garlic and cook for another 30 seconds.
- Add tomato sauce, salt and pepper, Italian herbs, and sugar. Cover lid and simmer for at least 8 minutes.
- Grease baking dish and add chicken.
- Top each chicken with 1/3 cup of sauce, mozzarella, 2 tbsp of parmesan, basil, and parsley.
- Bake in the oven for 15-20 minutes.
- While in the oven, cook pasta according to directions.
- Serve.
