Cantonese Soy Sauce Chow Mein

Ingredients
- 12 oz steamed, fresh Hong Kong style chow mein noodles
- 5 stalks green onion
- 4 oz bean sprouts
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 2 tsp sugar
- 1 tbsp water
- 1 tsp sesame oil
- 3 tbsp vegetable oil
Instructions
- Boil noodles as written on package (usually soak in boiled water for 2 minutes and rinse in cold water), using chopsticks to separate noodles.
- While water is boiling, chop green onions into 1 inch pieces and separate the white parts.
- Create sauce by adding dark soy sauce, light soy sauce, oyster sauce, sugar, and water and mix until the sugar dissolves.
- Add 1 tbsp of oil and cook the white part of the onion for under a minute. Set aside.
- Add 1 tbsp of oil and fry noodles on one side, separating and moving around slightly for 3 minutes.
- Flip noodles over and add 1 tbsp of oil around the sides. Keep separating noodles so they don’t stick together and fry for another 3 minutes.
- Move noodles to the side and add beansprouts. Cover beansprouts under the noodles and cook 30-45 seconds.
- Add green onions and mix around for 1-2 minutes.
- Pour sauce and mix for another minute.
- Add sesame oil and mix for another 2 minutes
- Add ½ tbsp of dark soy sauce if noodles are not dark enough.
- Serve.
