Cantonese Soy Sauce Chow Mein

Ingredients

  • 12 oz steamed, fresh Hong Kong style chow mein noodles
  • 5 stalks green onion
  • 4 oz bean sprouts
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp sugar
  • 1 tbsp water
  • 1 tsp sesame oil
  • 3 tbsp vegetable oil

Instructions

  1. Boil noodles as written on package (usually soak in boiled water for 2 minutes and rinse in cold water), using chopsticks to separate noodles.
  2. While water is boiling, chop green onions into 1 inch pieces and separate the white parts.
  3. Create sauce by adding dark soy sauce, light soy sauce, oyster sauce, sugar, and water and mix until the sugar dissolves.
  4. Add 1 tbsp of oil and cook the white part of the onion for under a minute. Set aside.
  5. Add 1 tbsp of oil and fry noodles on one side, separating and moving around slightly for 3 minutes.
  6. Flip noodles over and add 1 tbsp of oil around the sides. Keep separating noodles so they don’t stick together and fry for another 3 minutes.
  7. Move noodles to the side and add beansprouts. Cover beansprouts under the noodles and cook 30-45 seconds.
  8. Add green onions and mix around for 1-2 minutes.
  9. Pour sauce and mix for another minute.
  10. Add sesame oil and mix for another 2 minutes
  11. Add ½ tbsp of dark soy sauce if noodles are not dark enough.
  12. Serve.
