Hummus

Ingredients

  • 1 15.5oz can chickpeas
  • 4 garlic cloves, chopped
  • 3 tbsp tahini
  • 2 tsp cumin
  • 1 tsp kosher salt
  • 1/3 cup freshly-squeezed lemon juice (~1.5 lemons)
  • 3 tbsp extra-virgin olive oil
  • 1/2 tsp Aleppo pepper; or 1/4 tsp crushed red pepper

Instructions

  1. Drain and shell the chickpeas, reserving half of the liquid. Reserve a few chickpeas for garnish, if desired.
  2. Using a blender or food processor, purée the garlic, then add the chickpeas, tahini, cumin, salt, lemon juice, olive oil, and Aleppo pepper. Purée until a creamy paste is achieved. If necessary, add the reserved chickpea liquid in increments of 1/4 cup.
  3. Spread hummus in a shallow serving dish. With the back of a spoon, make a deep well in the surface and drizzle with olive oil. Garnish with sumac, parsley, or pine nuts. Serve with warm pitas.
