Marinated Chickpeas

Ingredients
- 2 15 oz cans of chickpeas, drained and rinsed
- 1/4 cup olive oil
- 1 lemon, juice and zest
- 1 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 garlic cloves, minced
- 1 tsp oregano
- 1/2 bunch of parsley, roughly chopped, stems removed
Instructions
- Combine all ingredients and store in a sealed container like a mason jar. Refrigerate for at least 24 hours, stirring occasionally. Store single servings in half pint mason jars.
