Marinated Chickpeas

Ingredients

  • 2 15 oz cans of chickpeas, drained and rinsed
  • 1/4 cup olive oil
  • 1 lemon, juice and zest
  • 1 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1/2 bunch of parsley, roughly chopped, stems removed

Instructions

  1. Combine all ingredients and store in a sealed container like a mason jar. Refrigerate for at least 24 hours, stirring occasionally. Store single servings in half pint mason jars.
