Simple Mac & Cheese

Ingredients
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 8 oz cheddar cheese, shredded
- 1/2 lb pasta
- 1/2 tsp kosher salt
- Black pepper to taste
Instructions
- Boil pasta to al dente and rinse in cold water.
- Melt butter in a medium saucepan on low-medium heat. Gradually add flour to make a roux, whisking quickly to prevent burning.
- Gradually add milk, whisking quickly to prevent clumping.
- Simmer mixture and add cheese gradually so it can melt. Stir to combine fully.
- Add pasta and salt, stir to cover pasta in sauce.
- Add additional salt and black pepper to taste.
