Simple Mac & Cheese

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 8 oz cheddar cheese, shredded
  • 1/2 lb pasta
  • 1/2 tsp kosher salt
  • Black pepper to taste

Instructions

  1. Boil pasta to al dente and rinse in cold water.
  2. Melt butter in a medium saucepan on low-medium heat. Gradually add flour to make a roux, whisking quickly to prevent burning.
  3. Gradually add milk, whisking quickly to prevent clumping.
  4. Simmer mixture and add cheese gradually so it can melt. Stir to combine fully.
  5. Add pasta and salt, stir to cover pasta in sauce.
  6. Add additional salt and black pepper to taste.
