Sourdough Pancakes

Ingredients

  • 4 tbsp butter, melted
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 341g sourdough starter, stirred
  • 235g all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt

Instructions

  1. In a large bowl, melt the butter. Let it cool slightly, then whisk it thoroughly with milk, eggs and vanilla.
  2. Add the sourdough starter and mix well.
  3. Add the remaining ingredients and mix well. Let the batter sit for 30 minutes.
  4. Towards the end of the waiting time, preheat a large cast-iron skillet.
  5. Use a ladle to pour batter on to the hot skillet, working in batches of three pancakes at a time. Let the pancake cook about 2 minutes, until the edges start to dry out and there's bubbling on top.
  6. Gently flip the pancake and cook 1 more minute.
