Sourdough Pancakes

Adapted from Don't Waste the Crumbs
Ingredients
- 4 tbsp butter, melted
- 2 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 341g sourdough starter, stirred
- 235g all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp kosher salt
Instructions
- In a large bowl, melt the butter. Let it cool slightly, then whisk it thoroughly with milk, eggs and vanilla.
- Add the sourdough starter and mix well.
- Add the remaining ingredients and mix well. Let the batter sit for 30 minutes.
- Towards the end of the waiting time, preheat a large cast-iron skillet.
- Use a ladle to pour batter on to the hot skillet, working in batches of three pancakes at a time. Let the pancake cook about 2 minutes, until the edges start to dry out and there's bubbling on top.
- Gently flip the pancake and cook 1 more minute.
