Sourdough Pizza

Ingredients

  • 227g sourdough starter, unfed/discard
  • 113g lukewarm water
  • 298g all-purpose flour
  • 1 tsp kosher salt
  • 1/2 tsp instant or active dry yeast

Instructions

  1. Mix all ingredients to combine in a large mixing bowl. Knead dough for 7 minutes.
  2. Place the dough in a greased container and let rise 2-4 hours in the fridge, until almost doubled in bulk.
  3. Divide dough in half and reserve one half. Coat a large cast-iron pan with olive oil. Shape remaining dough into a flattened disk, place in pan and let rest for 15 minutes. After this rest, gently press the dough toward the edges of the pans. If it starts to shrink back, cover and let rest for 15 minutes before continuing.
  4. Cover the pan and let the dough rise until it reaches desired thickness.
  5. Preheat oven to 450°F.
  6. Add sauce and toppings except for cheese. Bake for 5 minutes before removing from oven and adding cheese. Bake for an additional 5-7 minutes.
